No-Bake White Chocolate Coconut Snowmen

Christmas is the perfect time for everyone to lean more into making cute things. Making these coconut white chocolate snowmen is a wonderful way to combine holiday cheer with a touch of kitchen creativity. These adorable treats are a blend of rich white chocolate, creamy textures, and nutty coconut, coming together to create snowmen you’ll almost feel guilty eating—almost.

The beauty of this recipe lies not just in its flavor but also in its versatility. the decoration allows room for customisation, and you can use a multitude of candies, chocolates, sprinkles and more to make this recipe your own.

Make your Truffles

To begin, gently melt your white chocolate. I’ve used candy melts, which a white chocolate compound. They are less finicky than pure white chocolate is harder to work with, and won’t be very useful as the recipe doesn’t require tempering. You can also use white chocolate bars from the store, just pick a brand you like. Melt the chocolate in the microwave, using short 30 second bursts. Be sure to stir thoroughly after every microwave stint, to ensure that the heat distributes evenly and you don’t burn the chocolate. If you have a plastic bowl, it works even better due to plastic’s insulation properties. Just make sure that you use only dry utensils and bowls, even a drop of water can ruin your chocolate and seize it.

While the chocolate in still warm, add softened cream cheese and butter. Using a spoon or whisk, vigorously mix to ensure everything is combined well. Put it in the fridge for 30 minutes to firm up. Once it’s out, you just need to roll out 12 balls of 2 different sizes- 6 1 tbsp balls for the head, and 6 1.5 tbsp balls for the body. You can eye ball the measurements here, but you will end up with 6-8 snowmen based on the size you make them. Roll your coconut ball ‘laddoos’ in dessicated coconut, and you are ready to decorate and assemble. 

Decorations

Now while the truffle dough chills, it’s time to prep your fillings. I have used chupa chup candies for the scarves, but you can use sourpunks as well. 

For the face decoration on the head, there are several options.

  • Eggless Royal Icing: I had leftover royal icing so that’s what I’ve used. It dries quickly and can be made in inifinite colours. Click here for our eggless foolproof recipe, although you will have to make a tiny amount for this recipe.
  • Coloured white chocolate: While chocolate is easy to find, oil based colours that are safe for chocolate are harder to come by. Regular water or gel based colourings do not work with chocolate as they contain water and can seixe or ruin the chocolate. If you have oil based or powdered dyes, however, go for this option as it is easiest
  • Sprinkles/chocolate chips: Get creative and find alternate options based on what your local store has. You can try finding round chocolate sprinkles in your local store, or use tiny choco chips
  • Dyed coconut filling: You can also take a tiny amount of coconut filling (about 1 tbsp for the eyes and 1/2 tbsp for the mouth) and dye them black and orange respectively with gel colours. Make tiny round coconut balls yourself and stick them on to your heads using chocolate. Quite an ingenious option, but it is a little finicky to get right

I’ve also made little hats out of the leftover coconut dough, but this is totally optional. My snowmen looked cute both with and without the hats. If you chose to make some, all you do is roll out a tiny amount of dough (1/2 tsp), place it on a small round cookie (I’ve used readymade almond sables from a local bakery), and dip the whole contraption in dark chocolate. This required some time and patience to get right, however, so I would not recommend the step unless you want to go all out.  

Assembly

For assembly, all you need to do is use white chocolate to glue your head and body together. I’ve preshaped the muffler scarf and glued it using white chocolate, and added it to the body before my head. This ensures more stability and you can work with more hand freedom. I have also decorated my faces before hand so that body assembly is quick and easy.  Once everything is in place, place your snowmen in the fridge for another 10 minutes to firm up.

Ingredients

White Chocolate Coconut Truffles

  • 115 g white chocolate
  • 35 g (2 tbsp) cream cheese, softened
  • 20 g (1 tbsp) butter
  • 150 g desiccated coconut plus extra for rolling
  • 1 tsp coconut extract optional

Decoration & Assembly

  • 5-6 pieces Long stringed candy e.g., Chupa Chups, Sour Punks, or local alternatives
  • 2 tbsp royal icing in black and orange colours each see step-by-step instructions above for substitutions
  • 2 tbsp melted white chocolate for assembly
  • 2 tbsp melted dark chocolate optional, if making chocolate hats
  • 6-8 small round flat cookies storebought, to make the base for the chocolate hats

Instructions

Coconut Truffles

  • Melt the white chocolate in a plastic bowl in the microwave, using max 30-second intervals to prevent burning. Stir thoroughly after each session to ensure heat is distributed
  • Once melted, add butter, cream cheese, and the optional coconut extract.
  • Stir until fully incorporated into a paste. Mix in the desiccated coconut.
  • Place the mixture in the fridge for 30 minutes to firm up while you make the decorations.
  • Once firm, create 12 snowmen balls out, 6 of 1 tbsp dough, and 6 of 1.5 tbsp dough. The larger ones will be bodies, and the smaller ones will be the heads.
  • Roll all balls in desiccated coconut to coat them lightly.

Decorations

  • Take the smaller balls (the heads) and add facial features using royal icing or melted chocolate. Let decorations set for 1–2 minutes to prevent smudging during assembly.
  • Cut the long candy to create appropriately shaped scarves for your snowmen.
  • If you have leftover dough, you can make chocolate hats by placing small 1/2 tsp coconut dough over a round cookie, and dipping the whole assembly in dark chocolate. (See step-by-step for details and photos). Refrigerate until set.

Assembly

  • Using melted white chocolate as “glue,” tie the candy scarf and attach it securely. Place it over one of the larger body ball.
  • use white chocolate glue to attach the smaller head ball to the larger body ball. If you have made the hats, attach those as well.
  • Refrigerate the assembled snowmen for another 10 minutes to set.

Notes

Store in an airtight container in the fridge for up to five days.
