No-Bake White Chocolate Coconut Snowmen

Ingredients

White Chocolate Coconut Truffles

  • 115 g white chocolate
  • 35 g (2 tbsp) cream cheese, softened
  • 20 g (1 tbsp) butter
  • 150 g desiccated coconut plus extra for rolling
  • 1 tsp coconut extract optional

Decoration & Assembly

  • 5-6 pieces Long stringed candy e.g., Chupa Chups, Sour Punks, or local alternatives
  • 2 tbsp royal icing in black and orange colours each see step-by-step instructions above for substitutions
  • 2 tbsp melted white chocolate for assembly
  • 2 tbsp melted dark chocolate optional, if making chocolate hats
  • 6-8 small round flat cookies storebought, to make the base for the chocolate hats

Instructions

Coconut Truffles

  • Melt the white chocolate in a plastic bowl in the microwave, using max 30-second intervals to prevent burning. Stir thoroughly after each session to ensure heat is distributed
  • Once melted, add butter, cream cheese, and the optional coconut extract.
  • Stir until fully incorporated into a paste. Mix in the desiccated coconut.
  • Place the mixture in the fridge for 30 minutes to firm up while you make the decorations.
  • Once firm, create 12 snowmen balls out, 6 of 1 tbsp dough, and 6 of 1.5 tbsp dough. The larger ones will be bodies, and the smaller ones will be the heads.
  • Roll all balls in desiccated coconut to coat them lightly.

Decorations

  • Take the smaller balls (the heads) and add facial features using royal icing or melted chocolate. Let decorations set for 1–2 minutes to prevent smudging during assembly.
  • Cut the long candy to create appropriately shaped scarves for your snowmen.
  • If you have leftover dough, you can make chocolate hats by placing small 1/2 tsp coconut dough over a round cookie, and dipping the whole assembly in dark chocolate. (See step-by-step for details and photos). Refrigerate until set.

Assembly

  • Using melted white chocolate as “glue,” tie the candy scarf and attach it securely. Place it over one of the larger body ball.
  • use white chocolate glue to attach the smaller head ball to the larger body ball. If you have made the hats, attach those as well.
  • Refrigerate the assembled snowmen for another 10 minutes to set.

Notes

Store in an airtight container in the fridge for up to five days.
