Stuffed Baked Tomatoes

Stuffed baked tomatoes is an amazing side dish and snac., It goes well with both Indian and Continental food. The best thing about this recipe is its flavourful stuffing, which consists of herb butter, potato,cottage cheese, salt, pepper and fresh parsley.  Must try this easy and simple recipe.

Ingredients 

Medium tomatoes – 8
Onion chopped small – 1
Potato peeled and diced -1
Cottage cheese diced – 1 cup
Grated Parmesan cheese – 1 tbsp
Cheddar cheese diced – 1/4 cup Garlic herb butter – 2 tsp
Salt – 1/4 tsp
Freshly ground pepper -1/4
Fresh parsley- 1 tsp

First, preheat the oven at 200 C.

Now, cut a thin slice off the top of each tomato and scoop out the pulp. Then, In a frying pan, melt butter and saute onion, then add potatoes and cook until soft .

Now add cottage cheese, salt, pepper and cheese to the mixture. Then, switch off the flame,  add parsley and mix everything properly.

Stuff the tomatoes with the mixture.
 Place stuffed tomatoes in a baking dish and cover it with aluminum foil. Bake until tomatoes are tender. Then, remove the foil and grill for 5 minutes.

Serve hot.
