Scallion and Chives Vegan Biscuits

Everyone deserves at least one great biscuit recipe in their repertoire. With the flavour of scallion and chives, these biscuits are a warm delight straight from the oven. Ingredients:

All-purpose flour – 2&½ cups
Salt – 1 teaspoon
Vegan Butter/ margarine – ¾ cup, unsalted butter, cold and cubed
Baking powder – 1 teaspoon
Baking soda – ½ teaspoon
Coconut cream – ¾ cup
Scallion – ½ cup, finely chopped
Chives – 2 tablespoons, finely chopped.

Preheat the oven to 255°C.

Take a large bowl, combine all-purpose flour, salt, baking soda and baking powder and whisk together. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs (use a pastry blender, two knives, or fingertips). Continue this until the texture feels a little crumbly. Add scallion and chives to the batter and mix them along.

Add coconut cream and keep stirring the batter until a shaggy soft dough is formed. Don’t over mix it. Transfer dough to a floured surface and flatten out into a rough rectangle of 1/2 inch thickness. Fold the rectangle in half and use a rolling pin to flatten it again to 1/2 inch. Repeat the process until it sets together. Do not knead the mixture or biscuits won’t rise.

Using a cookie cutter, cut circles out of the 1/2 inch doughs, try to keep the cookiecutter as close as possible so that there is not much scrap left. If you don’t have a cookie-cutter you can also use a knife and cut the dough into small square pieces.

If you are left with some scrap or extra dough at the end, make sure you don’t ball it up, rather just roughly bring it together using your hands to make a dough and flatten it again to cut out more pieces.

Brush remaining butter on cookies and bake it for approximately 12-16 minutes. You know your biscuits are ready when the top is golden brown and biscuits have risen.

After removing from the oven let it cool down for a few minutes. Cut it into half like a bagel and serve with cream cheese.
