Sabudana Kheer

This jaggery sabudana kheer is made from soaked sabudana, It’s usually served during days of religious fasting  like Navratri. Sabudana kheer recipe is also one of the easiest Indian dessert recipes and can be prepared in less than 20 minutes.

Ingredients

Soaked Sabudana (tapioca pearl or sago) – 1/4 cup
Whole Milk – 2 1/2 cups
Jaggery powder – 1/4 cup
Cardamom Powder – 1/4tsp
Saffron strands – 4-5
Pistachio/almonds -2 tbsp ( optional )

First, soak sabudana in 1/4 cup of water for a minimum of  2 hours. Then heat the milk in a heavy bottomed pan over medium flame. When the milk comes to boil add soaked sabudana.
 Stir well and cook it on low heat until they turn transparent and soft. Make sure to stir continuously.

Add cardamom powder and dissolved saffron to the mixture.
 Stir continuously and cook until the milk turns thick. 
Turn off the flame then add jaggery powder and stir well until it dissolves completely.

Garnish with sliced almonds/pistachios and saffron serve warm or chilled.
