This perfectly oven-roasted pumpkin is an easy and versatile recipe for roasted pumpkin. These herbed pumpkin wedges can be enjoyed as snacks, with yoghurt dip or as a side dish with the main course. It’s easy, healthy and tasty.

Ingredients:
Pumpkin or butternut squash -1 small ( cut into wedges)
Olive oil -3 tbsp
Dried thyme – 1 tbsp Dried rosemary -1/2 tsp
Grated garlic cloves – 3-4
Salt and pepper – to taste
First, make a marinade by mixing together grated garlic, dried herbs, olive oil, salt and pepper.
Then, rub the wedges with the spice mixture until it’s coated all over and let them marinate until ready to roast.
Bake this pumpkin in a preheated oven at 200•C for about 20-25 minutes or until the wedges are soft. After that Grill the pumpkins for 5 mins at 230.C
Your oven roasted pumpkin is ready. Serve with yogurt Tahini dip.
