Moroccan Pancakes

Who in the world doesn’t love pancakes? We are here with the easiest recipe of Moroccan Pancakes. This simple sweet dessert can give a yummy start to your lazy mornings. With lots of holes and fluffiness, they can just melt in your mouth. Moroccan Pancakes are quite different from others. These pancakes are prepared either with all-purpose flour or fine semolina, however the authentic one always goes for the finest semolina, they are baked on one side and have an exceptionally unique taste to it.

Let’s learn it in few easy steps:

Ingredients you need:

Fine semolina (Rava/ suji) — 1&½ cup
All-purpose flour — ½ cup
Salt — ¾ teaspoon
Sugar — 1 teaspoon
Baking powder — 1&½ teaspoon
Lukewarm water — 3 cups (approx)
Yeast — 1&½ teaspoon (7grams)

Add ½ cup of lukewarm water, yeast and sugar into the blender and blend it at low speed, by doing this yeast will soften the batter and you’ll be able to get bubbles in pancakes. Now, add semolina, flour, baking powder, and salt to it. Gradually keep adding the rest of the water to make sure that consistency is maintained.

Blend everything on high speed for a minute or so, until the batter is smooth and creamy. The batter should be quite thin in texture.

After you have blended everything, cover the batter with plastic wrap and wait for 10 minutes or more. This step gives the batter the time to absorb all ingredients and yeast to function. Wait until the batter is light and foamy.

For the final step all you have to do is heat a non-stick griddle, keep it to medium flame. Slowly pour the batter in the center by using a ladle and stir it and spread it evenly into a circle. Make it as large as you like. Cook it for about two minutes until it doesn’t appear wet anywhere. You are all set to do plating and serve it hot.

Tips-

Do not swirl the pan when you spread the batter
Do not flip the pancake.

Made this Moroccan pancakes with semolina, normally cooked only one side, the batter must be the right consistency. If the batter is too thick, the bubbles can't form. Try this delicate and spongy pancakes. Recipe ⬇️ Fine Semolina (suji /Rava)- 1 1/2 cup All-purpose flour- 1/2 cup Salt- 3/4 tsp Sugar- 1 tsp Baking powder- 1 1/2 tsp Lukewarm water- 3 cups ( adjust according to consistency Yeast- 1 1/2 tsp (7g) Method⬇️ 1️⃣In a blender put 1/2 of the lukewarm water, yeast and sugar blend in low speed. Add semolina, flour, salt, and baking powder. Then gradually add rest of water 2️⃣Now increase the speed and blend everything together for a minute or until smooth and creamy. The batter should be thin, same consistency as crepe batter.
3️⃣Cover the batter with plastic wrap and leave it for 10 mins or more until the top of the batter is light and foamy. 4️⃣Heat a non-stick griddle over medium flame. Stir the batter and slowly pour with ladle into the center like a pancake,don’t swirl the pan. Let bubbles appear on the surface, don't flip.
