Here is the most loved snack from Gujarat- Famously known as Patras or colocasia leaves role. The leaves are smeared with gram flour-chili-tomato paste and rolled in are healthy and yummy ingredients in it.

Ingredients that you need:
Arbi/ colocasia leaves — 12(approx)
Gram flour (Besan) — 1&¼ cup
Rice flour — 2 tablespoons
Hot oil — 1 tablespoon
Salt — As per your taste.
Whole dry red chilies — 2to3
Garlic Cloves — 6to7
Yellow mustard seeds — ½ teaspoon
Turmeric powder — 1 teaspoon
Tomato — 1
Water — ¼ cup
Mustard oil — 3 to 4 tablespoon (for shallow fry)
To prepare a masala paste for patra you need to finely grind dry red chillies, garlic cloves,
turmeric powder, and Tomato together until it forms a paste.
Add Besan (Gram flour), rice flour, salt, oil, masala paste and mix it nicely together. Now gradually add ¼ cup of water and mix it to make a thick paste. Make sure the consistency of the mixture is like a smooth spread. This paste adds all the flavours to the dish.
Wash all the leaves and carefully snip out extra veins from the center of the leaves with the help of a knife. You will notice that there are two sides to the leaf, one side is glossy and the other side is dry, so keep the glossy part downwards so that you can apply your batter on the dry part.

Slowly start applying the batter on the first leaf, then add another leaf of the same or smaller size on top of it. Keep applying batter to each leaf that you add. Repeat the process for 4to5 leaves to form a layer.
Start rolling the leaves and keep applying batter to let it act as glue when you fold it over like a roll. Your role should look like a nice tight cylinder shape.
Once you’re done making 2-3 similar roles, put them into the steamer and cook them for 10-12 minutes on high flame. After that let them cool down on room temperature, and then slice them into thick or thin pieces with a sharp knife.
Heat some oil in a pan, add some mustard seeds, and shallow fry the pieces till they turn brown and crispy from both the sides.
You can add green chilies and white sesame seeds as per your taste.
