Basque (burnt) cheesecake is one of the desserts that is trending everywhere. You can make it a few simple steps and enjoy your time.
In this recipe, you can actually feel and see three different textures in one cheesecake. The first layer of cheesecake is burnt surface that gives you a slightly bitter smoky flavour, the second layer is the dense part, which is just similar to baked cheesecake and around the center, you can taste the gooey core.

Ingredients you need
Mascarpone Cheese — 100gm (room temperature)
Cream cheese — 200gm (room temperature)
Condensed Milk — 80g (room temperature)
Heavy Cream — 100g (room temperature)
Caster Sugar — 9 teaspoons
Sea Salt — ¼ teaspoon
Vanilla Extract 1teaspoon
All-purpose flour(maida) — 6 teaspoons
Whey Protein — (dairy-based protein for structure) 2&½ teaspoon
Tip — Use a hand mixer or strand mixture
Line the baking tin with 2 large pieces of parchment paper. Carefully smoothen out the folds in the paper by pressing it firmly against the wall of tin. This will create a layer on the surface of the tin and would be easier to remove the cheesecake.
To prepare the batter, as a next step, take a mixing bowl, add cream cheese, mascarpone cheese, and sugar in it. Mix everything together on low speed for a minute or so. Make sure that sugar is dissolved completely in the batter.

Now, gradually and slowly add the condensed milk and mix it well. Add heavy cream, salt, and vanilla and mix it again nicely for a minute.
Now sift all-purpose flour and whey protein and add them to the cream cheese mixture. Mix flour and cream mixture together for another minute. Make sure that you don’t overmix them.
Transfer the batter into the baking tin and set it to bake at 200 ℃ for 45 minutes or till the top and the sides have a burnt crust.
Let the cheesecake cool down to room temperature and put it in the fridge for some time to set.
Once it is set you can then remove the parchment paper and cut your yummy cheesy cake.
Your basque cheesecake is ready to eat and cheer your mood with its amazing flavours. In the list of all the desserts, this cheesecake can be a perfect show-stealer. Treat yourself with yummy creamy cheesecake.
